Acorn Squash with Goat Cheese + Roasted Maple Walnuts- vegan optional

Here’s why you want to eat Squash:

Squash helps to bring greater balance to your thyroid. And, it helps to boost your liver,

allowing it to function better. It also provides glucose for your brain and the rest of

your nervous system, which results in you feeling calmer and more settled. Not to

mention, butternut + acorn squash are also great for decreasing sweet cravings.

Acorn Squash with Goat Cheese + Roasted Maple Walnuts- vegan opitional

2 acorn squash halved with seeds removed

1-2 tablespoons avocado oil

1 teaspoon Himalayan salt

Red chili flakes (optional)

1/3 cup maple syrup

6-8 oz goat cheese or cashew cheese (Treeline Cheesesmakers)

1/2-3/4 cup walnuts

1/3 cup maple syrup

Sprinkle of Himalayan salt to taste

Cooking directions:

Preheat oven to 425*F. Line a baking sheet with parchment paper and place halved

acorn squash face down. Bake for 35-45 mins until tender.

While the squash bakes, place walnuts on a parchment lined baking sheet and drizzle

1/3 cup maple syrup over all nuts, making sure all nuts are covered in syrup.

Next, sprinkle salt over nuts and place in the oven for 5-10 mins. (Bake at 425*F)

When the squash is baked, turn upright and drizzle with 1/3 cup maple syrup. Next, stuff

the center of the squash with goat cheese or cashew cheese, drizzle with avocado oil,

salt and red chili flakes (if you like!) Top with roasted maple walnuts you just prepared in

the oven!
