One Pot Creamy Cherry Tomato Pasta

Here’s why you want to eat CHERRY TOMATOES

Tomatoes have been misunderstood to be unhealthy due to being a nightshade fruit. Nightshade = fruits and vegetables that grow at night, under the moonlight. Labeling tomatoes as unhealthy is untrue. As a result, when you eat tomatoes, you can take on the energy of realizing that which you thought was “wrong or bad for you” really isn’t so bad after all, and actually has a lot of good to offer you if you just look more closely.

Ingredients

  • 200 g (2 cup) pappardelle pasta, 4 dry nests, or similar

  • 2 cups cherry tomatoes, cut in half

  • ½ red onion, diced 2 cloves garlic, minced

  • 1 handful spinach, heaping, chopped or baby spinach

  • 2 cups vegetable broth

  • 4 tbsp tomato paste, heaping

  • 1 cup plant-based cream, coconut, cashew, or sunflower

TO SERVE

  • fresh parsley, chopped

  • vegan (or dairy) parmesan, grated

Directions

  • In a large deep skillet, add the

  • pappardelle pasta, cherry tomatoes, red onion, garlic, spinach, vegetable broth, tomato paste, plant-based cream and vegetable broth.

  • Set the heat to medium and cover for 4 to 5 minutes until the pasta is softened,

  • slightly.

  • Uncover, and stir until everything is combined, then cover again for an additional to 5 to 7 minutes, stirring again halfway through, until the pasta is al dente

  • Serve with freshly chopped parsley and vegan (or dairy) parmesan, as desired.
