GREEK POTATOES

Serves 4

Here’s why you want to eat POTATOES:

Potatoes have been misunderstood to be “bad for you” and to cause weight gain…

However, that’s NOT the case. Potatoes actually help you to lose weight. Potatoes have been used to transport fat to our bodies- as in sour cream, butter and cheese and as a result of being constantly used as a fat delivery system, this has earned the potato the perception of being a food that causes weight gain. In actuality, potatoes are anti fungal, anti bacterial and help with weight loss, IBS and anxiety. Additionally, because potatoes grow in the ground, when you eat potatoes regularly, you take on a more grounded solid energy vs feeling confused and unsure of yourself.

  • 6 Yukon gold potatoes, cut into wedges

For serving

  • 1 handful fresh parsley, chopped

  • Flaky salt, as desired
