Zucchini Gnocchi in Creamy Herb Cashew Sauce
gluten free, grain free, dairy free, refined sugar free + vegan / makes 4 servings

Zucchini is a fruit that helps to hydrate your liver and additionally soothes your intestinal tract. This allows your body to absorb more nutrients. And, can keep you feeling healthier. Additionally, zucchini is another food that helps us to feel a bit calmer and more settled.
Ingredients
Ingredients for gnocchi
2 cups GF gnocchi (Trader Joe’s brand is great!)
1 1/2 cups zucchini
I teaspoon avocado oil
Salt + pepper to taste
Ingredients for Herb Cashew Sauce
1/4 cup cashews, soaked
2/3 cup unsweetened almond milk or coconut milk
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
1 clove fresh garlic- minced
1/2 teaspoon garlic powder
Salt + black pepper
Optional
Extra parsley, chopped
Chili flakes
Handful of salted whole cashews
Directions
Cook gnocchi in water according to package instructions, drain.
Heat avocado oil in pan and sauté zucchini 3-4 min. Until lightly golden.
Add cooked gnocchi to the pan and saute’ 2-3 min. Until slightly crispy
Blend cashews, almond or coconut milk, lemon juice, minced garlic and garlic powder, salt + pepper until smooth.
Stir sauce into pan and simmer gently 2-3 min., until creamy
Fold in parsley
Adjust seasoning and serve hot
