Roasted Ratatouille-Style Vegetable Bake with Garlic Herb Sauce

Here’s why you want to eat TOMATOES
They’re chock full of micronutrients, phyto-chemicals and minerals to support many functions of your liver. And, keeping your liver healthy means potentially bypassing illness and disease.
Tomatoes have been misunderstood to be unhealthy due to being a nightshade fruit. Nightshade = fruits and vegetables that grow at night, under the moonlight. Labeling tomatoes as unhealthy is untrue. As a result, when you eat tomatoes, you can take on the energy of realizing that which you thought was “wrong or bad for you” really isn’t so bad after all, and actually has a lot of good to offer you, if you just look more closely.
Ingredients
Vegetables
1 medium zucchini, sliced into 1/4-inch rounds
1 medium yellow squash, sliced
2 Roma tomatoes, sliced
1 small eggplant, sliced into rounds
1 large onion, sliced into thick rings
3 tablespoons avocado oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon paprika
Salt + black pepper, to taste
Garlic Herb Sauce (Drizzle)
1/2 cup almond or coconut yogurt, or greek yogurt
1 tablespoon avocado oil
1 tablespoon lemon juice
1 garlic clove, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh dill (optional)
Salt to taste
Directions
Prep + Season
Preheat oven to 400*F (200*C).
Line a baking dish with parchment paper.
Arrange sliced vegetables upright in alternating layers.
Brush or drizzle with avocado oil
Sprinkle garlic powder, thyme, oregano, paprika, salt + pepper evenly over vegetables
Roast
Bake uncovered for 30-40 minutes until vegetables are tender and slightly caramelized on the edges.
Make Garlic Herb Sauce
In a bowl, mix yogurt, avocado oil, lemon juice, garlic, parsley, dill + salt.
Chill until ready to serve.
Finish
Drizzle garlic herb sauce over warm vegetables.
Garnish with extra parsley before serving.
