Maple Glaze Carrots
Here’s why you want to eat CARROTS
Carrots contains a source of glucose that helps refuel the liver and when they’re eaten raw, they have antiseptic compounds that help slow down + block the growth of unfriendly microorganisms in your gut and body. And as is the case with all root vegetables, carrots help you to feel more grounded and settled when eaten regularly.
Ingredients
6-8 carrots, washed and peeled
Maple glaze
3 tbsp olive oil
4 tbsp maple syrup
1 tsp cinnamon
½ tsp ground ginger
½ tsp salt
1 tsp paprika
To garnish
Fresh parsley, chopped
Directions
Preheat the oven to 425F.
Peel and slice your carrots on an angle, around 1” in length.
In a jar, mix the olive oil, maple syrup, cinnamon, ginger, salt and paprika until combined.
Transfer the carrots to a bowl and pour the glaze over top.
Put on a baking sheet, and roast for 20 to 25 minutes, tossing halfway through. In the last two minutes, set the oven to broil to caramelize the carrots.
Sprinkle with parsley to serve.
